Glitne® Whole Halibut

The unique taste and structure of Snow White Halibut from Glitne® is formed by the deep, cold crystal-clear water of the Sognefjord. A fjord surrounded by high mountains and glaciers, with a long history of fisheries and rich mythology.

Whole halibut from Glitne® is harvested locally from deep water with a temperature of 8 degrees and placed directly on ice. All handling of the fish is done by hand. Avoiding the fish becoming stressed and keeping them continuously cold ensures excellent quality and a good shelf-life. The whole halibut are transported in ice slurry and packed in boxes at a modern harvesting facility. The meat of the fish matures naturally while on ice. The fish keep for a long time, 17 days after they leave the sea. Whole fish should not be cut up until immediately before cooking.
