Freshness

Whole halibut has a long shelf-life if it is properly refrigerated from harvesting to cooking. However, all fish is highly perishable, so it is important you determine the freshness yourself. Check at delivery or before purchasing and again before cooking.

Smell – This is the best way to determine freshness. Fresh fish should have a slight sea or salty smell or no odour at all.

Texture – Whole fish and fillet should be firm and spring back when touched.

Appearance – Whole halibut straight form the box should be moist and covered with the protective mucus. Fillets should be moist and glistening. The gills and eyes should be pink and clear, respectively, but they can be slightly discoloured by the protective mucus.
