Baking

Requires an oven and allows the halibut to cook slowly from the inside out.

Baking in the oven is an easy way to prepare your dish. It requires a low temperature (120 – 180 °C) and allows halibut to cook slowly from the inside out, enhancing its natural flavours. The baked fish can often be browned first in a sauté pan or a grill pan and transferred to the oven to finish.

Preheat the oven to 120 – 180 °C.

Wash and clean the fish.

Add butter / oil to a baking tray or put on a baking sheet.

Rub the fish with butter / oil and salt + pepper.

Either place the fish on the baking tray or brown it first in a sauté pan or a grill pan (1-2 minutes).

Add desired vegetables or seasonings.

Insert a thermometer into the thickest part and place it in the middle of the oven.

Take out the fish when the thermometer reads 45-48 °C or when the fish meat is slightly tranclusent in the centre, for small cuts, serve immediately, for larger cuts/whole, let the fish rest for 5 minutes before serving.
